  • ½ cup yogurt (whisked)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp cumin seeds
  • 1–2 bay leaves
  • 1–2 cups water (adjust consistency)
  • Salt to taste
  • Fresh coriander leaves (for garnish)

🍳 Instructions:

  1. Heat oil in a deep pan or kadai. Add cumin seeds and bay leaves, let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and green chilies, cook for 1–2 minutes.
  4. Add tomatoes and cook until the oil separates.
  5. Mix in turmeric, red chili powder, and coriander powder. Stir well.
  6. Add chicken pieces, coat them with the masala, and cook for 5–6 minutes.
  7. Lower heat, add whisked yogurt, and mix well.
  8. Add water to make curry consistency, cover, and simmer for 15–20 minutes until chicken is cooked.
  9. Sprinkle garam masala, mix, and let it rest for 2 minutes.
  10. Garnish with fresh coriander leaves and serve hot.

2. Masala dosa

🛒 Ingredients

For Dosa Batter (if making from scratch):

  • 2 cups rice
  • ½ cup urad dal (split black gram)
  • 1 tbsp chana dal (optional)
  • ½ tsp fenugreek seeds
  • Salt to taste

For Masala (Potato Filling):

  • 3 medium potatoes (boiled & mashed)
  • 1 onion (thinly sliced)
  • 2 green chilies (chopped)
  • 1 tsp ginger (finely chopped)
  • ½ tsp mustard seeds
  • 1 sprig curry leaves
  • ½ tsp turmeric powder
  • 1 tbsp oil
  • Salt to taste
  • Fresh coriander leaves (chopped)

For Cooking:

  • Oil or ghee (for roasting dosas)

Step 1: Prepare Dosa Batter

  1. Wash and soak rice, urad dal, chana dal, and fenugreek seeds for 6–8 hours.
  2. Grind into a smooth batter, adding water as needed.
  3. Ferment overnight or 8–10 hours until the batter doubles and turns airy.
  4. Add salt before making dosas.

Step 2: Prepare Masala Filling

  1. Heat oil in a pan. Add mustard seeds, let them splutter.
  2. Add curry leaves, onions, green chilies, and ginger. Sauté until onions are soft.
  3. Add turmeric powder and salt. Mix well.
  4. Add boiled & mashed potatoes, mix thoroughly.
  5. Garnish with chopped coriander. Set aside.

Step 3: Make Masala Dosa

  1. Heat a non-stick tawa or dosa pan. Pour a ladle of batter in the center and spread thin in a circular motion.
  2. Drizzle a little oil or ghee around the edges.
  3. Cook on medium flame until the bottom turns golden and crisp.
  4. Place 2–3 tbsp of potato masala in the center.
  5. Fold the dosa into a roll or triangle shape.
